Mascarpone, strawberry and cream cake
Aaand summer is officially here. Fresh fruit can be found anywhere and especially at the farmers market.
Ingredients:
For the base:
- 400 gr. of ladyfingers
For the orange syrup:
- 4 oranges (418 ml of orange juice)
- 20 gr. of sugar
- 60 ml. of water
For the strawberry syrup:
- 155 ml. of water
- 45 ml. of strawberry syrup
For the strawberry compote:
- 385 gr. strawberries (329 g of actual fruit after removing the bruised parts)
- 30 gr. of sugar
- 1 tsp. of corn flower
For the cream:
- 500 gr. of Mascarpone
- 200 ml. of vegetable cream
- 120 gr. of sugar
For the decor:
- 1 tbsp. of cocoa powder
- a couple of mint leaves
